mRELEVANCE has kicked off our Summer is Served contest. Over the next few weeks, we will be sharing our favorite summer recipes during a spirited and tasty Facebook contest. Today, our managing partners faced off with their favorite summer recipes. Make sure to check our mRELEVANCE Facebook Page daily for photos of staff members with their favorite summer recipe – a healthy dish or tasty beverage. At the end of our campaign, you will be asked to vote to decide who has served the favorite summertime dish.
Round One: Carol Morgan versus Mitch Levinson set a lively pace for the competition.
Carol chose a light summer dish, perfect for everyone competing in the mRELEVANCE weight loss challenge. She states, “Eating healthy is something I work hard to do! I maintain an almost completely gluten-free diet, so sharing this recipe is a fun way to show that being gluten-free can be tasty! Plus, pizza crisp is super-fast and easy to fix. I added a kale and field greens salad today to make it a meal.”
- Udi’s gluten free pizza crust
- Pizza Sauce
- Green and orange bell peppers
- Part skim mozzarella cheese
- Premixed kale and spring mix salad
- Cherry tomatoes
Carol adds, “The nice thing about this recipe is that you can add whatever toppings you want, so it is easy to please everyone. Because I’m always on the go, this is a go-to dish for me to make for lunch or dinner and then get back to work at my computer or run back to the barn to ride or complete the next chore.” As a Managing Partner for mRELEVANCE, Carol’s days consist of creating and tweaking marketing strategies for clients, approving reports, interacting with clients and agency partners and lots of paperwork and accounting. Her favorite thing to do is riding her dressage horse. When she isn’t riding horses, she and her son enjoy traveling or just being couch potatoes and watching NCIS.
Mitch chose a traditional summer dish that is a favorite for picnics or dinner at home. He states, “I do a lot of entertaining and what could be more perfect than the classic cheeseburger with a skewer of shrimp? This is one of my favorite go-to meals for the boys on the 12U baseball or basketball teams and their parents. After the game, we just fire up the grill and chow down. To me, a cook-out after a successful baseball game is a Cheeseburger in Paradise!” Mitch’s days consist of crunching accounting numbers, approving reports, creating reports and lots of interaction with clients and agency partners. His favorite thing to do after a long day is simply to watch his kids participate in their sports and activities, or just hang out with them.
